Arugula can also be grown as a healthy microgreen. It prefers cooler weather, and is best planted in early spring or fall and sown regularly for continual harvests. The warmer it is, the more shaded the arugula should be. Harvest the leaves when they're around 2-3" and pull off any flower buds, as flowers cause bitter leaves.
